One lovely trick you can play with can flippers is pretend to be a complete noob. Fly up to the can as if to take your ore back. Instead of taking the ore, target them. If they're not switched on they may think you took the ore, they web/scramble/...

Here's a guide for the Gallente COSMOS missions. There aren't that many to do, and generally they don't pay very well, compared to lvl 4s. They are also quite easy, the hardest part is killing your target before someone else does.

As FuzzBuzz said, sentry drones don't move. While annoying at first, it can make for some interesting tactics. Also they are quite strong, I've even used them to tank an easy lvl 4 mission.
